Sweet and creamy with warming spices, nothing says fall like this apple butter. Perfect on a cheese board, brushed on grilled pork chops, or just slathered on fresh baked bread, versatility is the name of the game here! Be sure to use “baking” apples for this recipe (Granny Smith is the most popular variety) as the tart flavor will prevent the butter from becoming too sweet. It’s not necessary to peel the apples, but you can if you’d like. The peels contain pectin, which will yield a thicker finished product (closer to a jam).
Ingredients
- ½ c. Light Brown or Demerara Sugar
- 2 T. Butter
- 1 lb Tart Apples (like Granny Smith), Cored, Diced
- ¼ t. Ground Cloves
- ¼ t. Ground Allspice
- ½ Stick Cinnamon
- ½ t. Kosher Salt
- Pinch of Cayenne Pepper (optional)
Directions
- Add sugar and butter to a medium, high-sided pot and set over medium-low heat.
- Allow butter and sugar to melt and gently caramelize, stirring occasionally, 2-3 minutes.
- Add remaining ingredients to the pot and stir to combine.
- Cook gently, occasionally stirring, until apples have caramelized and broken down completely, 25-35 minutes.
- Remove the cinnamon stick and puree with a hand blender or in a standard blender.
- Transfer to a container and refrigerate overnight; the sauce will thicken as it cools.
- The sauce will keep in the refrigerator for up to 2 weeks and should be stored in a covered container.
