Harissa Spiced Lamb Rack

Bold, vibrant flavor to the table, combining the warm, smoky heat of North African spices with the richness of perfectly roasted lamb.
Ingredients
- 1 rack of lamb, frenched, about 2 lbs.
- 2 Tbsp harissa paste
- 2 Tbsp olive oil
- 2 Tbsp fresh chopped herbs (parsley, dill, chives, etc.)
- Kosher salt & fresh ground black pepper to taste
Directions
- Set oven to 475ºF
- In a small bowl, combine harissa paste, olive oil, and herbs
- Set a roasting rack over a sheet tray and season the lamb rack generously with salt and pepper
- Rub the harissa mixture all over the lamb, ensuring an even coating
- Place lamb rack on roasting rack sheet tray setup and place in the oven
- Cook until a probe thermometer inserted into the center of the cut reaches desired temperature, 120ºF for medium-rare
- Remove from over, tent with aluminum foil, and allow to rest for 10-20 minutes
- Carve the rack between each bone, or double bone if you prefer
- Serve immediately.
