Harissa Spiced Lamb Rack

Bold, vibrant flavor to the table, combining the warm, smoky heat of North African spices with the richness of perfectly roasted lamb.

Ingredients

  • 1 rack of lamb, frenched, about 2 lbs.
  • 2 Tbsp harissa paste
  • 2 Tbsp olive oil
  • 2 Tbsp fresh chopped herbs (parsley, dill, chives, etc.)
  • Kosher salt & fresh ground black pepper to taste

Directions

  • Set oven to 475ºF
  • In a small bowl, combine harissa paste, olive oil, and herbs
  • Set a roasting rack over a sheet tray and season the lamb rack generously with salt and pepper
  • Rub the harissa mixture all over the lamb, ensuring an even coating
  • Place lamb rack on roasting rack sheet tray setup and place in the oven
  • Cook until a probe thermometer inserted into the center of the cut reaches desired temperature, 120ºF for medium-rare
  • Remove from over, tent with aluminum foil, and allow to rest for 10-20 minutes
  • Carve the rack between each bone, or double bone if you prefer
  • Serve immediately.
