This Mixed Chicory Salad with Winter Citrus & Herbed Buttermilk Vinaigrette is a refreshing counterpoint to heartier wintertime (or year-round) dishes—clean, elegant, and full of contrast.
Ingredients
For the Winter Citrus & Herbed Buttermilk Vinaigrette
- 2 oz Apple Cider Vinegar
- 4 oz Buttermilk
- 1 Tbsp Honey
- 4 oz Extra virgin olive oil
- Chopped fresh parsley, chives, and dill
- Salt & Pepper to taste
For the Mixed Chicory Salad
- 4 cups mixed bitter greens (Treviso, radicchio, frisee, endive, escarole)
- 1 cup sweet citrus segments (tangerine, clementine, blood orange)
- 4 oz Herbed buttermilk vinaigrette
- Toasted pumpkin or sunflower seeds, for garnish
- Grated Parmesan cheese, for garnish
- Salt & Pepper to taste
Directions
For the Winter Citrus & Herbed Buttermilk Vinaigrette:
- In a medium mixing bowl combine the vinegar, buttermilk, and honey
- Season generously with salt and pepper, and while whisking vigorously, slowly add the oil until all is incorporated. Alternatively, this can be done in a blender
- Stir in as much chopped herbs as you like, taste and adjust seasoning
- Set aside
For the Mixed Chicory Salad:
- In another large mixing bowl, combine the greens, citrus, and dressing and season with salt and pepper
- Mix well, taste, and adjust seasoning if necessary
- Transfer to serving dish and top with plenty of grated Parmesan cheese and toasted seeds
- Serve immediately
