Shrimp Scampi

Light yet indulgent, this dish highlights clean flavors and simple technique.

Ingredients

  • 1 oz extra virgin olive oil
  • 1 lb shrimp, size 13-15, peeled and deveined, thawed
  • 2 cloves garlic, minced
  • 1 tsp Calabrian chili paste
  • ½ cup white wine
  • 2 Tbsp butter
  • Salt & Pepper to taste
  • Chopped parsley for garnish
  • Lemon zest for garnish

Directions

  • Lay the shrimp out on a large plate or baking sheet and pat dry
  • Season with salt and pepper
  • Add the oil to a large sauté pan set over medium-high heat
  • When the oil is shimmering with wisps of smoke, add the shrimp and sauté quickly until gently caramelizing and starting to turn pink, about 1 minute
  • Add the garlic and chili paste and continue to cook, stirring constantly for about 30 seconds, until very fragrant
  • Add the white wine and reduce the heat to medium
  • Reduce by about ½, remove from the heat and add the butter
  • Swirl the pan or stir vigorously until the butter is melted
  • Season to taste, add chopped parsley and lemon zest, and serve immediately.
