Shrimp Scampi

Ingredients
- 1 oz extra virgin olive oil
- 1 lb shrimp, size 13-15, peeled and deveined, thawed
- 2 cloves garlic, minced
- 1 tsp Calabrian chili paste
- ½ cup white wine
- 2 Tbsp butter
- Salt & Pepper to taste
- Chopped parsley for garnish
- Lemon zest for garnish
Directions
- Lay the shrimp out on a large plate or baking sheet and pat dry
- Season with salt and pepper
- Add the oil to a large sauté pan set over medium-high heat
- When the oil is shimmering with wisps of smoke, add the shrimp and sauté quickly until gently caramelizing and starting to turn pink, about 1 minute
- Add the garlic and chili paste and continue to cook, stirring constantly for about 30 seconds, until very fragrant
- Add the white wine and reduce the heat to medium
- Reduce by about ½, remove from the heat and add the butter
- Swirl the pan or stir vigorously until the butter is melted
- Season to taste, add chopped parsley and lemon zest, and serve immediately.
