Tasting Notes
The 2025 Sauvignon Blanc opens with bright and refreshing notes of peach, subtle melon, fresh-cut pineapple, and a touch of lime zest. Subtle notes of brioche help enhance the fresher fruit while supporting the mineral crispness. A zippy quality races through the palate, creating layers of complex notes like grapefruit pith, mango, and passionfruit.

Winemaking Notes
Our Sauvignon Blanc was fermented for seven months in 25% new French oak, 50% neutral French oak, and 25% stainless steel. When primary fermentation was complete, the wine was then sulfured to prevent Malolactic fermentation. The wine was then aged on the lees and stirred twice a week before being bottled.
Vineyard Notes
The historic Priest Ranch is now part of the Somerston Estate, a significant property totaling 1,682 acres, with 230 acres planted to hillside vineyards. Dramatic elevations of the vineyards define and distinguish the estate, ranging from 800 ft to 1,615 ft above sea level.
