Brown Butter Parmesan Fried Fish

Ingredients

  • 4-6 White Fish Filets (cod, trout, halibut)
  • 1 lb Polywog Cabin Fish Fry
  • 2 cups Buttermilk
  • 2 cups High Heat Cooking Oil (vegetable, peanut, canola)
  • Spiceology Brown Butter Parmesan Seasoning
  • 2 tbsp Black Garlic Hot Sauce
  • 1 bunch of chives
  • Lemon Wedge for Garnish

Directions

  • In a mixing bowl, add buttermilk and 2 tbs hot sauce.

  • Place filets in the buttermilk mixture. Soak for 30 minutes.

  • In a separate mixing bowl, add the fish fry mixture.

  • Heat oil in a cast-iron skillet or a non-stick on medium heat. Fill about 1 inch deep.

  • Once heated, dredge fish filets in buttermilk, then in the dry mix.

  • Then gently lie down in oil. Fry 2-4 minutes per side, depending on thickness, until golden brown.

  • Once pulled from oil, season both sides with Spiceology Brown Butter Parmesan Seasoning.

  • Garnish with chives, lemon wedge, and black garlic hot sauce to taste. Serve alongside Priest Ranch Grenache Blanc or Priest Ranch Sauvignon Blanc.
